Weight Watcher Tropical Black Beans and Rice

Ingredients
olive oilred onion, dicedfresh lime juicecilantro, freshcayenne peppersweet red pepper, dicedgreen pepper, dicedmango, dicedgarlicblack beans, canned, 15 ounce can3 cups cooked brown rice
Directions
Coat a large nonstick skillet with cooking spray. Add oil and heat over medium heat until sizzling.

Add all ingredients except beans and rice. Cook, stirring occasionally, until peppers are crisp-temder, about 5 minutes.

Stir in beans. Cook until heated through, about 5 minutes. Serve over rice.

Serving Size: 3/4 cup rice, 1 cup bean mixture, 1 tortilla
