From Scratch Slow Cooker Chicken Cacciatore

Ingredients
1 lb. chicken thighs (Thighs really are best, because they get really tender in the crock pot and have more iron. Breasts get dry and tough)1 28oz can tomatoes1 large bell pepper, cut into 2"x1" long strips1/2 large onion, cut into thick wedges8 oz. mushrooms, cut into halves/quarters1 1/2 cups chicken broth2 tsp. minced garlic1 tsp. each dried oregano, thyme, and basilPepper to taste
Directions
Place chicken at bottom of crock pot. Season with pepper and herbs.

Place all other ingredients on top of chicken.

Cook on low for 7 hours.

Serve over Polenta, which soaks up all the delicious juices, to be truly authentic!
