Banana Walnut buckwheat pancakes

Ingredients
2/3 cup buckwheat flour1/3 cup cornmeal1 TBS sugar1/2 tsp baking powder1/4 tsp salt1 serving egg replacer1 cup coconut milk (drinking kind)1 TBS grapeseed oil1 banana, sliced2 TBS chopped walnutscooking spray
Directions
1. Mix dry ingredients.
2. Add egg replacer, coconut milk and oil, stir well.
3. Slice in banana and walnuts.
4. Heat a pan or griddle to medium high-ish heat with cooking spray (I use grapeseed oil in a mister)
5. Drop pancakes in with a 1/4 cup measure. Cover pan. Cook 3 minutes on one side, spray pancakes, flip and cook for 2 minutes on the other side.

Serving Size: Makes 8, 1/4 cup pancakes - 1 serving is two pancakes

    Really good and filling! I added some Truvia because I like my pancakes sweet but I think they'd be fine without. I also substituted almond milk because that's what I had on hand. - 6/19/15
