225g black beans (soaked overnight and rinsed thoroughly)I medium onion, finely sliced2 cloves garlic, choppedI large carrot, diced2 medium sticks celery, diced1 tsp smoked paprika4 sage leaves1 pint vegetable stock made with bouillion1/2 glass white wine2 tbsp virtually fat free fromage frais
Place all ingredients except the white wine and fromage frais in a warmed slow cooker (crockpot). Cook on med - high for 7-8 hours until beans are tender, adding more water if required.
Blend until smooth. Add white wine and serve hot with a swirl of fromage frais.
