Vegetable Oil Spray1 (16oz) can tomato puree1 cup water2tsps italian herb seasoning or 1 tsp. basil and 1 tsp oregano1 tsp garlic powder24 oz low fat cottage cheese 1%1/2 tsp onion powder1 (8oz) package elbow macaroni, uncooked4 oz part-skim mozzarella cheese - shredded
Preheat oven to 350 degrees F. Spray casserole with vegetable oil. In bowl combine tomato puree, water, Italian seasong and 1/2 tsp garlic powder. In another bowl combine cottage cheese, onion powder and 1/2 tsp garlic powder. Spone one-third of tomato mixture into prepared casserole. In order, layer half of macaroni, all of cottage cheese mixture and one-third of tomato mixture on top. Add remaining macaroni and cover with remaining tomato mixture. Cover. Bake 1 hour. Uncover. Top with mozerella cheese. Return to oven, uncovered until cheese is melted.
