Applesauce Banana Chip Muffins

1/3 cup Sugar 2 Tbsp. Vegetable Oil 1/3 cup Unsweetened Applesauce 3 Ripe Bananas 1 Egg, lightly beaten 2 tsp Vanilla 1 cup Bran Bud Cereal (not flakes) 1 cup Flour 1 tsp Baking Powder 1 tsp Baking Soda 1 tsp Salt 1/2 cup Chocolate Chips (optional)
1. Combine sugar, oil, applesauce, bananas, egg, vanilla and bran cereal. Let sit for 10 minutes.
2. Stir dry ingredients into the wet.
3. Fold in chocolate chips if desired.
4. Grease one 12-count and one 6-count muffin tins (or use liners.) Fill muffin cups 3/4 full.
5. Bake at 350 degrees F. for 20-25 minutes, or until golden brown.
Serving Size: Makes 15 medium-size muffins
