Banana Bran Muffins

Applesauce, unsweetened - 1/3 cupBrown Sugar - 1/4 cupAll-Bran Cereal - 1 cupBanana, fresh - 3 (medium size)Coconut Milk - 1/4 cupVanilla Extract - 1 tsp.Egg - 1 (large size)White Flour - 1/2 cupWhole Wheat Flour - 1/2 cupBaking Powder - 1 tsp.Baking Soda - 1 tsp.Salt - 1/4 tsp.
1. Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.
2. In a large mixing bowl, mix together applesauce and brown sugar; add egg and mix well.
3. In a separate bowl, mash the bananas; add milk and vanilla; combine into the large mixing bowl.
4. In another separate bowl, mix together the bran, flour, baking powder, soda, and salt (you may wish to put your bran into a food processor first, depending on what consistency you want your muffins to have); blend into the large mixing bowl.
5. If desired, stir in walnuts.
6. Pour batter into prepared muffin cups.
7. Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
8. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.
