"Thai" Pie

Ingredients:Whole Wheat English Muffin or whole wheat pitaPizza Sauce (1 Tablespoon), 2 servingCooked chicken Breast2% Mozzarella shredded, 0.25 cupGreen and/or red bell peppers, 2 tbspOnions, raw, 2 tbsp choppedCocktail Peanuts (a few)Thai Seasoning (sprinkle on top)
Directions
Spread pizza sauce on either two english muffins or one whole wheat pita. Top with cooked cubed chicken, onions, peppers, a sprinkle of thai seasoning and a few peanuts and then top with mozzarella cheese. Toast under broiler until cheese is browned. These freeze and refrigerate well.
