Carrot Pancakes (2 pancakes)

Ingredients
1 1/4 Flour1/4 c. finely chopped pecans2 tsp baking powder1 tsp cinnamon1/4 salt1 egg1/3 c packed brown sugar1 c milk1 c grated carrots1 tsp vanilla
Directions
In a large bowl combine the first 5 ingredients.

Combine the remaining ingredients in a small bowl. Stir into the dy ingredients just until moist.

Pour batter by 1/4 c onto a grease hot griddle. turn when bubbles form on the top of pancake: cook until 2nd side is golden brown.
