Potato and Spinach Frittata

Ingredients
1 Tbsp unsalted butter6 slices turkey bacon1 potato, thinly sliced8 eggs, beaten2 Tbsp water2 cups fresh spinach, chopped2 slices Swiss cheese
Directions
Melt butter in skillet over medium heat and add chopped turkey bacon. Cook until slightly browned. Layer thinly sliced potatoes (uncooked) over turkey bacon. Beat eggs and water together and pour over the potatoes. Nestle the spinach into the eggs and bake at 400 degrees F for 20-30 minutes until the center is cooked and not jiggly. Remove from oven and add cheese slices. Cover with lid and allow cheese to melt. Divide into 4 quarters...serves 4 people. Enjoy!
