Apple Muffins from Aunt Jemima Whole Wheat Pancake Mix box

1 C Aunt Jemima Whole Wheat Blend Pancake Mix 1 C Wheat flour, white, bread, enriched1/3 C Brown Sugar2 tsp Baking Powder1 tsp cinnamon1 C Almond Breeze Almond Milk, Original1/3 C Canola Oil 1 Egg1 tsp Vanilla Extract1 Apple, peeled, cored and choppedTopping:4 tsp sugar1tsp cinnamon
Mix dry ingredients in a medium bowl. Mix wet ingredients in a small bowl and pour into dry ingredients and stir until JUST combined. Peel, core and chop apple. Fold apple pieces into mixture.
Spray muffin tins or use liners. Separate batter into 18 equal portions in muffin tins. Top each with cinnamon-sugar mixture and bake at 400 for 15-18 minutes.
Serving Size: Makes 18 muffins. 1 muffin = 1 serving.
