Thai Style Ground Beef

Ingredients
1 medium onion, finely chopped (about 1 cup)2 cloves garlic, minced (1 tsp)1 tbsp minced ginger3/4 pound extra-lean ground beef1 tbsp Thai red curry paste1 14.5 ounce can crushed tomatoes2 tsp brown sugar1 tbsp fish sauce or reduced-sodium soy sauce1/2 cup lite canned coconut milk
Directions
Coat a large skillet with nonstick cooking spray. Saute onions, garlic and ginger on medium heat, until softened—about 3-4 minutes. Crumble ground beef and cook until no longer pink. Drain beef. Add red curry paste, canned tomatoes, sugar, fish sauce (or soy), and coconut milk. Simmer for 10-15 minutes.
