Mango Paradise Chicken

Ingredients
* Chicken Breast, no skin, 4 breast, * Curry powder, 2 tbsp * Chili pepper flakes, 1 tbsp * Olive Oil, 1 tbsp * onion, raw (1 large or 2 small) * Med. Green Bell Pepper, 1 * Raisins Sun-Maid - 1 snack-size box (apx 1/4 cup) * 99% fat free chicken stock, 1/2 to 3/4 cup * cornstarch, 1 tsp * Fresh Mango (one fruit) * Unsweetened Flaked Coconut, 1/4 cup
Directions
Cut chicken into bite size pieces and marinade in curry powder, chili & oil. Chop onions and pepper. Add chicken & veggies to frying pan on med-high heat and cook until done.

Mix cornstarch into the chicken stock, add to fry pan. Cook until bubbly & thick.

Add raisins, coconut & mango, heat through.

Serve with rice or naan.
