Omelette

Ingredients
2 eggland's best eggs3 tbsp chopped onion1 tbsp chopped pepper1/2 c chopped mushroom1 tbsp hormel bacon pieces (from jar)1 slice Kraft 2% American Cheesespray I Can't Believe It's Not Butter (to saute veggies)
Directions
Cut and saute vegetables in ICBNB spray in 7" nonstick skillet, with bacon bits on top of veggies. When mushrooms begin to brown and spinach is wilted and onions are getting translucent, remove from stove and put in a bowl. Spray skillet w/PAM. pour 2 eggs (or 1/2 c. egg substitute) in skillet, put over med-low heat til eggs are set. Run a rubber spatula around edges to loosen omelette, gradually working towards center. When egg is no longer runny, spoon veggies on one half, top with cheese, and fold. VOILA! :)
