Chorizo & Lentil Soup

Ingredients
1lb bag lentils (I used kroger brand)1 red onion2-3 redskin potatoes3-4 cloves garlicLeftover chorizo (optional, could be made vegetarian)1 bag frozen spinach2 tbsp olive oilChicken (or veggie) broth1 can fire-roasted tomatoes1-2 Chipotle peppers in adobo sauce
Directions
Saute Onion & Garlic in Olive Oil
Slice chorizo, add in
Once sweated (about 5-10 minutes), add ni all other ingredients except spinach
At the last minute, add spinach
Enjoy!
