Coach Jen's Turkey Enchiladas

Ingredients
1 medium onion, chopped2 tbsp vegetable oil2 cups cubed cooked turkey1 cup shredded Colby-Jack cheese (reduced fat), divided1 can (4 oz) chopped green chilies1 cup (8 oz) reduced fat sour cream1 can (10-3/4 oz) cream of chicken soup1/8 tsp ground coriander1/8 tsp ground cumin6 (8 in) whole wheat tortillas
Directions
In a large skillet, saute onion in oil until tender; remove from heat. Stir in the turkey, 1/2 cup cheese and chilies; set aside. In a saucepan, combine the sour cream, soup, coriander and cumin. Stir over low heat until warm, then stir in 1/2 cup of the turkey mixture.

Spoon about 1/3 cup turkey filling down the center of each tortilla; roll up tightly. Place seam side down in a greased 13x9x2-in baking dish. Spoon remaining soup mixture over the tortillas and sprink with remaining cheese.

Bake, uncovered at 350 degrees for 20-25 minutes or until bubbly.

    This recipe is awesome!! My husband loves it so much, he's asked me to make it again - two days later!! I slimmed mine down even more - used ff italian dressing instead of vegetable oil and used low fat cream of chicken soup...will definitely be passing this one on!! - 7/10/08
