Old fashioned Lentil Soup

2 cups dried lentils (one package)8-10 cups water1 medium onion, peeled and chopped2 stalks celery including top peeled and, chopped2 large carrots, peeled and chopped2 cups baby spinach, whole1 Tbs chicken boullion granules (I use Maggi brand)
Place lentils in large pot. Add 8 cups water. Bring to a boil. Turn heat down to low,. Let simmer 30 minutes stirring occasionally. Add 2 cups of water to pot. Peel and Chop Onion, Celery and Carrots. Add to soup. Simmer for 30 minutes . Add chicken boullion granules and 2 cups fresh whole baby spinach. Simmer for10 minutes or until lentils are tender. Add more water if you desire thinner soup. Turn off heat and let cool slightly,Serve warm.
