Fried Cabbage, Red onions and Broccoli

Ingredients
1/4 C chopped onion (I use purple onion)1/2 C sliced celery1.5 C sliced cabbage1/2 tsp. coarsely chopped garlic1 C broccoli florets1/2 +/- C of low sodium chicken broth
Directions
Spray a cast iron skillet with 3 quick shots of cooking spray and heat on low while preparing the vegetables.

When skillet is about medium hot and saute for 1-2 minutes until cabbage softens, add onion and saute for another minute, add garlic and continue to saute until onion starts to become clear, add broccoli and and stir until all sides are coated with liquids from the first ingredients, pour in about 1/2 the broth, cover until the broth is cooked away, then add the other half of the broth and continue to cook uncovered another few minutes stirring so as not to burn the vegetables. When liquid is cooked out turn off heat and serve.
