12 oz. pasta (cooked weight)1 T. Olive Oil1 cup onions1 cup fresh broccoli1 cup fresh cauliflower2 cups Shiitake mushrooms3 cups fresh spinach1 tsp fresh garlic1 tsp dried oregano leavesChipotle powder to taste9 oz. chicken breast
Start the water for pasta and when it boils, add the pasta and cook to al dente. Meanwhile, chop the vegetables into bite size pieces and, separately, the chicken. Brown the onions in the olive oil. Add all other veggies and spices. Add chicken and simmer until no longer pink. Stir in the cooked, drained pasta until well coated. OR for each serving put 1/3 of the veggie/chicken mixture over 1/3 of the pasta.
