Cheese and Broccoli Topped Chicken

Ingredients
2 cup broccoli flowerettes chopped20 oz chicken breast no skin or bone1/4 tsp each salt and pepper1/4 cup Hellmans Light mayonnaise 1 Tbsp Dijon Mustard1 green onion finely chopped3/4 cup (90g) light cheddar cheese shredded2 tbsp sliced almonds
Directions
Preheat oven to 375 F. Blanch the broccoli in boiling salted water for 3 minutes; drain and rinse under cold water. Reserve.
Pound chicken to an even thickness about 1/2 in. Arrange on foil lined baking sheet and season with salt and pepper.
Combine Mayonnaise and mustard. Stir in broccoli, green onion and 1/2 cup cheese. Spread an equal portion of this mixture over each chicken piece. Bake 15-17 minutes (or until internal temp reaches 165F. Sprinkle remaining cheese and almonds over chicken. Broil 1-2 minutes until cheese is bubble and nuts are slightly browned. Serve with rice or potatoes.
