Healthy Bran Muffins

1 quart buttermilk1 C. applesauce1 1/2 C. splenda4 egg whites (or 2 cups egg white substitute)5 C. flour5 tsp. baking soda20 oz. box Post Raisin Bran cereal1 C. raisins
Blend buttermild, applesauce, eggwhites, and splenda.
Add flour and baking soda and blend again.
Add cereal and raisins. Stir until all ingredients are mixed together.
Spray muffin pan with a non-stick cooking spray. (I don't recommend using paper cups, as the muffins tend to stick to the bottom).
Bake at 350 degrees for 25 minutes.
Serving Size: Makes 48 medium-sized muffins
