Seafood Jambalaya

4 slices turkey bacon, chopped1 cup chopped onion3/4 cup celery, sliced1 clove garlic, minced1/2 tsp cayenne pepper1 tsp dried oregano1/2 tsp dried thyme1 cup low sodium chicken broth2 cups water1 cup uncooked long-grain brown rice8 oz Mahi mahi fish8 oz shrimp
1- Cook the bacon, onion, celery, and garlic in askillet until bacon is crisp and vegetables are softened. Transfer to slow cooker.
2- Add remaining ingredients except fish and shrimp cover, and cook on low until rice is tender, about 4 hours.
3- Turn to high, add fish and shrimp, cover and cook until fish flake easily, about 30 min to 1 h.
Serving Size: makes 4 2-cups servings
