Chicken w/Apricot Sauce

Ingredients
Serve sauce over chicken
Directions
Pound chicken breast to 1/2" thickness.
Mix flour with salt & pepper. Dredge chicken into flour mixture.
Heat oil over med-high heat. Put chicken in pan; cook until done (5-7 minutes per side). Remove from pan, keep warm.
Add wine to pan along with chopped shallot. Stir to remove blackened bits from bottom of pan. Cook for 3 - 5 minutes. Add apricots & tarragon. Cook for 3 - 5 minutes. Add chicken back into pan. Spoon sauce over chicken.
Serve immediately.
Serve with rice & spinach.
