Savory Southern Salmon Croquettes

Ingredients
1 can pink salmon (drained and deboned)1 small onion (chopped)1 clove garlic (minced)8 - 10 Saltine crackers (crumbled fine)2 eggsSalt and pepper (to taste)
Directions
Add all ingredients together and mix in a bowl by hand. Then take the mix and form into individual patties. Mine are usually a 3 inch diameter, but you can make them any size you wish. Put the patties in an oil covered fry pan and cook 3 minutes on each side or until golden brown.

This can be served as a main dish or you could make smaller patties and serve them as an appetizer. This is one of my granny's faves! Delicious AND filling!
