Vanessa's Yummy Honey Flax Seed Muffins

Ingredients
Directions
1 1/2 cup whole wheat flour1/2 cup ground flax seed1/3 cup honey2 tsp baking powder1/2 tsp salt1 egg2/3 cup low fat vanilla soy milk1/4 cup crushed peanuts (optional)
1. Pre-heat oven to 400F.
2. Grease or line with muffin cups a 12 cup muffin tin.
3. Measure flour, flax seed, baking powder, and salt in a medium sized bowl and stir well to blend ingredients together.
4. In another bowl, beat egg and honey together. Beat in soy milk.
5. Add wet ingredients to dry ingredients, and stir just until all dry ingredients are moistened. Do not over mix.
6. Spoon batter into prepared muffin tin. Sprinkle crushed peanuts on top of muffins.
7. Bake for 15-20 minutes, or until risen and golden brown on top.
8. Remove tin from oven and turn muffins out on a rack to cool.
9. Enjoy!!
