Hearty Italian sausage and navy bean soup

Ingredients

1 cup diced onions1 cup chopped carrots1 cup diced celery6 cups diced canned no salt added tomatoes3 cups canned navy beans1 cup low or no sodium chicken broth3 tsp canola oil2 cloves garlic ( optional )1 lb Italian sausage ( ground or links with casing removed )1/2 tsp salt1 tsp black pepper1 Tbs dried oregano or 1/3 cup fresh1 tsp sugar1 cup water
In large soup pot heat oil over medium heat. Cook onion,carrots,celery, garlic,salt and pepper until softened-stirring occasionally ( about 6 mins )
Increase heat to med-high and add sausage and saute for another 5 mins while breaking into pieces with spoon.
Add tomatoes,beans,chicken broth,water, oregano and sugar and bring to a boil. Reduce heat and simmer for 40 minutes or until beans are cooked through.
