Black Bean Quesadilla Filling

Ingredients
1 can black beans, rinsed and drained1 can Chipoltle Peppers1/2 an onion1/4 tsp Cumin (or 1/8 tsp taco seasoning)
Directions
Chop the onions, add all ingredients to blender or food processor and blend until smooth.

Serving Size: Makes 2 cups filling, I typically use about 2-4 tbs filling per person depending on the size of the tortillas

    One can of chipotle peppers results in a very spicy filling. Reducing the number of peppers or exchanging the chipotle for bell pepper can make a less spicy version. - 1/10/15
