Philly Cheese Crustless Mini Quiche

1/2 medium onion, diced1 Steak-ummm sliced steak, cooked2 slices fat free Swiss cheese, sliced2 whole eggs6 egg whites1 1/2 tsp spicy mustard1/2 tsp Caraway SeedSalt & pepper, to taste
1. Preheat oven to 350 degrees. Lightly spray a mini cupcake pan with cooking spray and set aside.
2. In a skillet over medium heat, saute onion until golden, about 4 - 5 minutes. Set aside to cool.
3. In a large bowl, combine egg whites, whole eggs, mustard, cheese, caraway seed and salt & pepper and mix well. When onions have cooled, add to egg mixture.
4. Spoon mixture into the prepared pan, filling the cups 3/4 full. Divide steak mixture and place into each cup.
5. Bake for 30 minutes or until set and lightly browned.
Serving Size: Makes 24 mini quiches
