2 egg whites3 Tablespoons unsweetened almond milk1 Tablespoon pure vanilla extract1/2 Tablespoon vegetable Oil1/2 Tablespoon unsweetened applesauce5 Tablespoons fat free Pancake Mix 1 teaspoon Poppy Seeds1 Tablespoon Sugar Free Jello Lemon Pudding Mix, dry1 scoop Vanilla Isolate Protein PowderPinch salt
1. Preheat oven to 350 degrees.
2. In a bowl, combine egg whites, milk, vanilla, applesauce, and oil and mix thoroughly. In a separate bowl, combine pancake mix, pudding mix, poppy seeds, protein powder and salt and stir.
3. Pour egg mixture into flour mixture, stir until combined and pour into a non stick mini muffin pan that has been sprayed with Pam.
4. Bake for 10-12 minutes, until toothpick inserted comes out clean.
Serving Size: Makes 12 mini muffins
