Preheat oven to 450
Prepare the sweet potatoes: Rinse them in the sink and dry it off very, very well. If it's still wet the olive oil won't coat the fries as well, which will lead to soggy fries.
In a small bowl, combine cumin, salt, and pepper. Set aside. Peel potatoes, cut each in half lengthwise, and cut each half into fries. In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated.
Bake the fries: On a baking, arrange potatoes in a single layer and place on the middle shelf of the oven. Space out the fries on the baking sheet. Make sure they're all evenly spaced and not touching. They'll get soggy otherwise! Put them in the oven for 15 minutes. Do not open the oven or fidget with them during this time. Just let 'em cook. Then, take them out and flip them, tongs work well for this. Once they're flipped, put them back in the oven for 5 to 10 minutes.
