Cream of Celery Soup

1 1/2 cups chicken broth1/2 cup chopped onion1 1/2 cups chopped celery2 Tbsp snipped parsley1/2 tsp dried basil2 Tbsp butter2 Tbsp flour1/2 tsp saltdash of white pepper1 cup milk
In saucepan combine chicken broth, chopped onion, and celery, basil and parsley. Bring mixture to a boil. Reduce heat, cover and simmer for 15 minutes.
Place half the celery mixture into a blender or food processor. Cover and blend 30 to 60 seconds or until smooth. Pour into bowl. Repeat with remaining celery mixture and set aside.
In the same saucepan, melt the butter. Blend in flour, salt, pepper. Add the milk all at once. Cook and stir till mixture is thickened and bubbly. Stir in the blended celery mixture. Cook and stir till soup is heated through. Season to tase with additional salt/pepper.
Serving Size: Makes 3-4 servings
