Peanutty Banana Bread

Ingredients
2 Cups Bob's Red Mill GF All-Purpose Flour1 CupDate Sugar or ground dates instead of regular sugar1 Tbsp Powder1/2 Tsp Salt1 Cup Mashed Ripe Bananas (about 2 medium)1/3 Cup Soy Milk1/3 Cup Peanut Butter9 Tblsp Flax Meal instead of 3 Tblsp Vegetable Oil1 Tbsp Flax Meal with 3 Tblsp Warm Water instead of 1 Egg1/3 Cup Pecan Pieces
Directions
Preheat oven to 350 deg F. Line 9x5 loaf pan with parchment paper. In a small bowl, add warm water to 1 Tbsp flax meal and allow to set up for a few minutes. In large mixing bowl, combine flour, sugar, baking powder and salt. Add bananas, milk, peanut butter, 9 tbsp flax meal, and warm water/flax meal mix. Mix just until dry ingredients are moistened. Spoon batter into pan; sprinkle with pecan pieces.

Bake 60-70 minutes or until wooden pick inserted in center comes out clean. Remove from oven; cool in pan 10 minutes. Remove bread from pan to cooling rack; cool completely.
