Oatmeal and Wheat Flour Blueberry Pancakes

1/2 Cup Whole Wheat Flour1/2 Cup All Purpose Flour2 Tbs Brown Sugar2Tbs Baking Powder1/2 tsp Salt1 1/2 Cups Quick Cooking Oatmeal2 Cups Soy Milk1 Egg2 Tbs Olive Oil1/2 Cup Frozen Blueberries
Mix Oats and soy milk and allow to sit for 10 minutes.
In large bowl mix flours, brown sugar, baking powder and salt.
Whisk egg and olive oil into oat and soy milk. Pour into flour mixture and mix until smooth. Fold in blueberries.
Cook on hot griddle until done.
Serving Size: Makes 8 servings
