Low Fat Banana Oatmeal Muffins

Ingredients
1 1/4 C. flour1/2 C. brown sugar, packed1/2 tsp salt1/2 tsp baking soda1/4 tsp baking powder1 Tbs. vegetable oil1 large egg (beaten)2 large egg whites (beaten)3 medium bananas (mashed)1 C. dry oatmeal3/4 C chopped walnuts
Directions
Preheat oven to 350 degrees F. Stir together dry ingredients. Add oil and eggs and mix thoroughly. Add mashed bananas and oatmeal and mix well. Fold in walnuts. Pour batter into 12 muffin tins and bake until the top is golden and firm to touch, 40-45 mins. remove and cool on wire rack. Makes 12 muffins.

    very, very good!! I did tweek it a bit. I did 1c whole wheat flour with 1/4 c flour. subsituted applesauce for the oil and did 1/4c brown sugar & 1/4 c splenda instead. added 1 tsp cinnamon and 1/4 c. raisins. only baked for 35min at 350.
