Gluten Free Broccoli Cheese Soup

1/2 Onion, diced6 slices of bacon, sliced4 cups of chicken broth (or bullion)1.5 cups half and half or heavy cream1/4 tsp cyanne or red pepper flakes2 tablespoons parsley1 cup shredded or diced cheddar cheese3 cups chopped steamed or boiled broccoli
Cook bacon in large pot, and when bacon is 1/2 cooked, add onions. Cook until onions are clear on medium heat. Add chicken broth and spices. Stir until warm. Do not boil.
If broccoli is uncooked, add first, and warm until cooked through. If using steamed, microwaved or boiled broccoli, add broccoli and cheese and stir until creamy.
This soup can be served pureed or chunky. For smoother texture, puree 1/2 of the cooked broccoli before adding to soup.
Serving Size: Makes six to eight servings.
