Power Muffins

Ingredients
2 cups Kashi Heart to Heart cereal1 cup Old Fashioned Oats6 Tbsp. Flaxseed meal1/2 cup almonds, dry roasted, no salt1.5 cups rice milk (any type of milk works)1 egg1 cup pumpkin, canned (or any fruit puree like applesauce)2 Tbsp. honey1.5 tsp. baking powder0.5 tsp baking soda1.5 tsp cinnamon0.5 tsp nutmeg1/2 cup Craisins (or other dried fruit, like raisins)
Directions
In food processor, grind almonds, then add cereal, oats, flaxseed meal, baking powder, baking soda, cinnamon & nutmeg, and blend until smooth.
In a large bowl, mix together milk, egg, fruit, and honey. Add dry ingredients all at once and mix thoroughly.
Spray muffin tin and fill each cup. Bake 400 degrees for 25-30 minutes.
