French Macarons with salted caramel ganache

100 grams conf sugar100 grams almond flour55 grams granulated sugar70 grams egg white (2 large)100 grams sugar200 grams heavy cream50 grams butter75 grams dark chocolate chips75 grams milk chocolate chips
pulverize confectioners sugar and almond flour.
beat egg whites, gradually add granulated sugar to form stiff peaks. Fold sifted almond/sugar powder over meringue in no more than 50 strokes until combined.
Pipe onto cookie sheet with parchment paper and bake at 350F for about12-15 minutes, quickly opening oven door halfway to let steam escape. Cool on rack
In heavy pot, make a dry caramel with granulated sugar, add heated heavy cream and cook until dissolved. Add butter and salt. Pour over chocolate and mix until melted.
Put ganache between 2 cookies.
