3 cups coarsely grated zucchini1/2 tsp. salt1 cup breadcrumbs1 small onion chopped fine1/4 cup bell pepper1 1/2 tsp Old Bay Seasoning1 tsp Dijon mustard1 tbsp mayo1/8 tsp red pepper flakes2 tbsp olive oil1 tsp butter
place zucchini in colander, sprinkle with salt. press with paper towels to remove as much liquid as possible. Zucchini should be dry - about 2 cups. Place zucchini and remaining ingredients in a bowl. mix well. Form 8 patties the size of crab cakes.
