Creamy Mustard Sauce

Ingredients
2-3 tbsp mustard seedssaltpepper4 tbsp butter-onion 2 tb sp butter-vermouth or white wine 1/3 cupchicken broth 1/3 cup2.5 tbsp dijon mustard1/3 cup heavy cream -or- -- 4 tbsp sour cream-5 heads endive
Directions
start with meat of choice, pat in salt pepper and mustard seed
brown in pan with 2 tbsp butteruntil mostly cooked

remove from pan and add onion to drippings
saute for a few minutes

add liquids and mustard

bring to a low simmer
if you perfer a thicker sauce use less broth

add meat back in, cook till done,
remove meat again
place over rice
add endive to sauce
cook till wilted
pour sauce over meat and rice


Serving Size: makes enough sauce for 4 lg chicken breast or 6 bone less pork chops
