Salsa chicken with brown spanish rice

Ingredients
4 bonless skinless chicken breasts25 tbsp salsa1/2 cup light cheese1/2 cup green pepper1/2 cup onion1/2 cup ripe tomato chopped- diced canned1 tsp cumin seed or powder1 tsp chilli powder1/2 cup water or chicken brothWhen using water recipe is under 300 cal per serving, using broth it is 306 per servingThis recipe makes 4 servings.
Directions
If your using brwon rice start that first cause it takes 45 min to fully cook. Preheat oven to 350 degrees F. In a small casserole dish add 4 boneless skinless chicken breasts and salsa, I add enough to cover the top of all chicken about 25 tbsp, cover and bake for 30 min, after 30 min take off cover and add cheese optional of course, and let it cook for another 10. While chicken is cooking combine all left over ingrediants in a med sauce pan with 1/2 cup water or chicken broth. Let simmer untill rice is cooked combine rice and veggie mix, let sit for 5 min to let rice soak up flavor. Makes 4 servings. Enjoy:)
