Sweet Potato Chive Muffins

Ingredients
3 cups grated raw potatoes1/4 cup chopped chives3 eggs1 stick butter1 cup brown rice flour1 tsp Baking powder1 tsp Salt1/2 tsp Pepper
Directions
Whisk together potatoes, chives, eggs and butter
In another bowl combine flour, backing powder, salt and pepper
Add potato mixture and stir
Spoon into greased muffin pan
Bake 20 minues or until tookpick comes out clean.
