Low Fat Cranberry Cake

2 1/2 Cups of all purpose flour2 Teaspoons baking powder1 Teaspoon baking soda1 Teaspoon cinnamon1/2 teaspoon salt1/4 teaspoon groung nutmeg2 Eggs1/2 cup white sugar1/3 cup corn syrup or honey1 cup unsweetened apple saucegrated rind and juice of 1 orange1 can (348 ml) whole cranberry sauce1 cup raisins Icing sugar - enough to dust cooled cakeIn medium bowl, combine flour, baking powder, baking soda, cinnamon, salt and nutmeg. In large bowl, lightly beat eggs. One at a time stir in until blended: sugar, corn syrup or honey, apple sauce, orange rind and juice. Stir cranberry sauce with a fork until softened, stir into egg mixture. Fold in flour mixture and raisins just until moistened. Do not over mix. Spoon into lightly greased 9" X 13" baking pan.
Bake in 350 degree oven.
Cook 40 - 45 minutes or until toothpick comes out clean.
Cool completely on wire rack. Dust with icing sugar.
