Chicken Taquitos

Ingredients
2 corn tortillas3 oz baked chicken breast (divided)1/4c skim mozarella cheese (divided in half)1/4c raw spinach leaves (chopped)1/4c iceberg lettuce (chopped)1/4c raw radishes (sliced)1 jalapeno pepper (sliced and roasted)spices: garlic powder, black pepper, chili powder, white pepper, no salt (any otc kickn chickn mix)
Directions
Preheat oven to 450 degrees. Place frozen chicken in foil lined baking dish. Drizzle water over chicken until wet. Season chicken, cover with foil, and place in over for ~20 minutes.

Make salad of spinach, lettuce, radishes and chill.
When chicken is done, shred in it's own sauce. (Careful not to shred the foil lining.)

Heat corn tortillas in non-stick pan. Flip as needed. Also char the jalapenos. Place 1/2 the divided cheese on each tortilla, top with 1/2 the shredded chicken and half of the jalapenos on each tortilla..

Fold tortilla over and remove from pan. Open and add salad topping.

Great with a dollop of lite sour creme for dipping.
