Strawberry Rhubarb Crisp

*Rhubarb, 2.5 cup, sliced Strawberries, fresh, 16 oz, slicedWheat germ, .25 cup*Flour, white, 1.5 cup *Earth Balance Natural Buttery Spread, 4 tbspBrown Sugar, .5 cup, packed Oats, 1/4 cup
Spray 8x8 glass pan with non-stick spray.
Mix rhubarb and strawberries with 1/4 cup brown sugar and 2 Tbsn flour. (For an extra zing, add 2 tsp minced ginger).
Mix buttery spread, remaining flour, oats, sugar and wheat germ together until crumbles form. Crumble over top of fruit mixture.
Bake on 350 degrees for 45 minutes. Fruit will be bubbly, top will be crisp and lightly browned. Cut into 9 squares and serve alone or warm with a scoop of soy ice cream.
