ME's Whole Wheat Waffles

Ingredients
1 3/4 cup whole wheat pastry flour (Red Mill)1/2 tsp salt1 Tbl baking powder2 large eggs (separated yolks/whites)1 3/4 milk (used vanilla coconut milk)1/2 cup homemade applesauce1 tsp vanilla extract
Directions
Mix dry ingredients in one bowl and wet ingredients in another (except the egg whites). In a separate bowl beat egg whites till stiff peaks form. Gently FOLD them into bowl with the other ingredients and mix....careful not to over do it.

Heat waffle iron...use non-stick spray. Cook per iron's directions. Keep warm at 200.
