3 cups Fibre One Cereal1 cup skim milk1/2 cup brown sugar2 eggs2/3 cup applesauce1/2 cup oatmeal1 teaspoon cinnamon1 teaspoon baking soda1 cup flour2/3 cup chocolate chips
Preheat oven to 400F. Spray 12 cup muffin tin with cooking spray.
Mix cereal and milk in mixing bowl and let soak for 5 minutes. Stir in brown sugar, eggs and oatmeal. Add baking soda, applesauce, chocolate chips and flour. Stir well.
Fill muffin tins full with batter (they don't rise very much). Bake in preheated oven 18 to 20 minutes.
