1 c. whole whear flour1 c. flaxseed flour1 c. instant oatmeal1 tsp. pure stevia extract2 tsp. baking soda1 tsp. baking powder2 tbs. ground cinnamon1.5 c. shredded carrots2 apples.5 c. chopped walnuts.5 craisins.75 c. skim milk2 eggs1 tsp. vanilla
Mix all ingredients together, except milk, eggs, and vanilla. Mix thouroughly. Mix together liquid ingredients and then add to dry mixture. Fill cupcake holders almost full, and bake at 350 F for 20-23 min. Can freeze if you don't use within a few days.
