Lentil Stew

1 c. lentils1 large onion, diced4 cloves garlic, minced1 tbsp. olive oil2 large carrots, coarsely chopped2 ribs celery, diced2 medium sweet potatoes, sliced4 bay leaves1/2 c. wheat berries1 tbsp brown rice miso1/2 tsp dried thymesea salt and pepperChicken or vegetable stock
1. Prepare lentils according to package directions. Lentils should be chewy, not soft.
2. In a large skillet, saute onion and garlic together for about 2 minutes in oil. Add remaining vegetables and bay leaves and continue to cook for 5 minutes more. Add wheat berries and continue to cook 35 minutes. If stew is too thick, dilute with water or stock.
3. Mix one tablespoon of water with miso and add to the stew. Cover and simmer another 15 minutes. Season with salt and pepper and thyme. Remove from heat and serve.
