spiced chickpeas on naan

2 whole Naan cut in half to equal 4 servings2 cans chickpeas drained and rinsed to equal 2 cups3 cloves garlic, minced with a little salt1 onion cut in half, and then into thin half moons1red or yellow bell pepper thinly sliced1/2 english cucumber grated to equal about 1 cup 1/4 to 1/2 t red pepper flakes2 T cumin3t kosher salt2 t coriander3 T chopped cilantro2 T sweet paprikaolive oil sprayground pepper to taste
saute garlic in oil til soft and fragrant, add chickpeas, cumin, coriander, 1T paprika and pepper flakes, cook til combined. Mash 1/2 of the chickpeas and add enough water to make it saucy. Push to the side of the skillet and add the onions and pepper, cook til veggies are crisp tender, then combine with chickpea mixture. Add salt and pepper to taste
Spray naan with olive oil spray and heat in oven til warmed through.
combine ypgurt, cucumber, rest of paprika and salt to taste
plate 1/2 naan, top with 1/4 of the chickpea mixture, and top with 1/4 of the cucumber sauce
Serving Size: 1/2 naan and generous 1 C chickpea mixture and 1/4 cucumber sauce
