1 cup uncooked brown or whole grain rice 1/2 cup egg substitute1 pound ground turkey15 ounces spaghetti sauce2 cups mozzerella cheese1/2 cup cottage cheese1/2 cup grated parmasean cheese2 tbsp grated parmasean cheesegarlic, salt, and pepper to taste
Prepare rice as directed on box. Set aside to cool slightly. Then add egg. In a skillet, thoroughly cook turkey, then add the spaghetti sauce. Continue to cook until heated throughout. In a separate bowl, combine all cheeses, except 2 tbsp of parmasean. In a greased 8 x 8 square glass dish, add half of the rice, followed by half of the cheese mixture, and then the meat sauce. Repeat the layers, and top with the 2 tbsp of parmasean cheese. Cook in oven at 350 degrees for 15-20 minutes, or until bubbly.
